Pan fried Chicken breast with Sundried tomato & feta cheese.

This recipe is lovely for a light lunch, and is one of our favourites!

You will need:

  • Chicken breast
  • Sundried tomato
  • Feta cheese
  • Herbs (own preference)
  • Bit of oil for frying

Take the chicken breast, lightly salt it and pan fry slowly in a bit of oil until golden brown. Chop the sundried tomato roughly and dice the feta cheese into small blocks. Mix the feta cheese and sundried tomato together, add a bit of sweet basil and thyme (or any other herbs that you would prefer).

Add the mixture on top of the chicken breast and put in the oven for 10-15min, at 160C.

Enjoy with a freshly made green salad.
